I took the blueberry chia jam recipe a step further with these blueberry vanilla overnight oats! These are also great for back to school as you can make these the night before so your morning goes smoothly. I made these a bit differently by blending them but you can leave out that step if need be.
1/2 cup of rolled oats (gluten-free)
3/4 cup of light coconut milk
1/4 cup of blueberry chia jam
2 tsp of pure vanilla extract
2 tsp of cinnamon
1/2 cup of organic blueberries
Combine the oats, milk and blueberry jam and refrigerate overnight. The next morning, blend the oats, milk, jam, vanilla and cinnamon well. Scoop into a mason jar and top with more blueberry chia jam and fresh blueberries. It's as simple as that! Do you still have a ton of blueberries leftover? Wondering what to do with them?
