Simple Lemon Water Oats


Oats in lemon water with a little coconut milk and toppings.  This is what I did this morning for my post workout breakfast after a week or two of overindulging.  I have overindulged since my bday on Feb 18th so I'm trying to pull back.  Last night I couldn't sleep I was berating myself for craving sugar...which doesn't serve me, I only end up feeling worse.  I'm getting back to meditating, I even have a meditation buddy to check in with.  Pick yourself up and move on when you overeat or skip a workout, it does no good to dwell on your imperfections.  Do better at the next meal, don't wait, the next meal, the next smoothie, the next brisk walk around the block is waiting for you.

Oats help me get back to basics and remember what eating clean tastes like-yumminess!!  I usually put a ton of toppings on oats but I just scaled down to two.  And lemon water....how awesome is lemon water?  I'm just so in love.  It's refreshing and tasty and hydrating and just puts a twist on a beautiful simple drink of water.

It's getting slightly warmer this week so today I'm taking advantage of it to walk to Trader Joe's and stock up on veggies and fruit.  I'm walking through Central Park to the Upper West Side to go to that location.  My mom bought me some TJ's gift cards for my bday and I love my Trader Joe's runs!

Here is my simple oats recipe. When you feel out of control, come back to the basics.

Ingredients:

1/2 cup of gluten-free rolled oats
1 cup of filtered water
Juice from 1 lemon
2-4 tbsp of coconut milk to make it creamy
2 tbsp of maple syrup
1/4 cup of dried cherries (unsulphered, no preservatives)
2 tbsp of almond butter

Add your oats and water to a medium pot and cook the oats on low.  Add the lemon juice and stir. Once the oats are done and the water is almost evaporated, add the coconut milk.  Transfer oats to a bowl and add the maple syrup, cherries and almond butter. Serve and enjoy :)
