Fall Oats

Oats are so comforting. They are warm and delish, full of fiber and richness. They help me get back on track when I lose my way eating clean, I feel filled yet guilt-free when I have oats and they are a regular part of my diet. I bring them everywhere, I can order them anywhere, oatmeal is so universal and I love that. My favorite way to eat them is with plenty of fruit and a nut butter, some maple syrup or coconut sugar for sweetening and a spice or two. Here is another fall themed oat bowl that I can't wait to share with you.

I'm going to give you my tried and true oat recipe and you can feel free to experiment with it and build upon it.
1/2 cup of rolled oats
1 cup of coconut water
Juice from half of a lemon
2 tsp or more of pumpkin pie spice
A splash of plant based milk
2 tbsp of maple syrup
2 tsp of vanilla extract
1 persimmon, chopped
1 pear, sliced
1 pomegranate, seeded

Pour the 1/2 cup of oats in a small pot and turn the heat on low. Add the coconut water and lemon juice and simmer on low. Cover the pot and let simmer for 5 minutes. Once the water is almost absorbed, turn off the heat and add the splash of milk, maple syrup and vanilla extract. Stir well.
Transfer the oats to a bowl and sprinkle on the pumpkin pie spice. Add the chopped fruit and pomegranate seeds and sprinkle some pumpkin pie spice on top of the pear if you wish.

Half of a cup of oats yields a lot of oatmeal so you will be very filled! I plan on having lots of oats this weekend when I go to the mountains with my family. I also plan on sitting by the firepit and drinking hot chocolate. Lots of yummy recipes on the way next week! Have a fabulous weekend!

I love trying new plant-based milks even though I usually buy West Soy unsweetened soy milk. I go for milks that have the least amount of ingredients and are organic. West Soy unsweetened plain soy milk is organic soybeans and water. Beautiful. If I don't buy milk, I make it myself, either almond or oat milk. Yesterday I bought oat milk and it is DELICIOUS!

Three Ingredient Fudgy Brownies

These brownies did not come out of my brain as they are not my recipe. I found the recipe on instagram under @lilsipper. Her account is so so cool; she makes very cool, delicious looking food, mostly desserts, using very interesting ingredients and ingredients you would not think to use.
