Two Energy Packed Smoothie Recipes

Ahhhh I just came back from a very hot and sunny run but fortunately I had on sunscreen and a visor!  It doesn't look like it's going to be as hot as it was on Tuesday but it's very warm today.  But it's beautiful and it's Friday!!!  What are your plans for the weekend?  What kind of recipes are cooking up??

Here are two smoothies I drank before my runs this weekend and they really helped to fuel me. Today's smoothie was packed with coconut milk which has alot of fat but this also means lots of energy.  I need to go food shopping this weekend so plan on more recipes this coming week.

I'm in the midst of working on a vegan eats in NYC post and I'm collaborating with another local food blogger, Beth Reed of, and I can't wait until we publish our joint post!  Beth is so nice....and she's vegan and gluten free so she was showing me the vegan, GF scene in Brooklyn the other day.  Stay tuned for our post next Friday.

Blueberry Banana Smoothie:

2 cups of coconut water
2 pints of organic blueberries
2 frozen bananas
2 tbsp of hemp seeds

Combine all ingredients except the hemp seeds in your high speed blender (I use a Ninja blender) and top with the hemp seeds.  Hemp seeds are my new obsession!  They are a great plant based protein source and they have tons of nutrients and energy.  Try them on your smoothies and in your oatmeal.

Chocolate Banana Coconut Smoothie

1.5 cups of coconut milk
2 frozen bananas
2 scoops of chocolate vegan protein powder or 2.5 tbsp of cacao powder
1 oz of raw superfoods blend or raw nuts (I buy Jucie Press's superfoods blend)

Combine all ingredients except the superfoods blend in your blender and blend on high.  Top with nuts or superfoods.  It tastes like ice cream :)  This recipe is totally raw if you use cacao powder instead of the protein powder.

These are also great smoothies after a run when you want to recover.  I love starting my day with an energy packed smoothie especially if it's a warm morning.

What's your favorite smoothie recipe?  Post it in the comments.

Did you buy my ebook yet?  Here it is if you want to check it out.

Peanut Butter Vanilla Oat Milk Smoothie

I love trying new plant-based milks even though I usually buy West Soy unsweetened soy milk. I go for milks that have the least amount of ingredients and are organic. West Soy unsweetened plain soy milk is organic soybeans and water. Beautiful. If I don't buy milk, I make it myself, either almond or oat milk. Yesterday I bought oat milk and it is DELICIOUS!

Chewy Energy Bars (no added sugar, vegan, gluten-free)

Energy bars with lot of fiber, minimal sugar and high protein are a great snack. I grab and just go and I feel full for the time that I'm out and about and I need to get things done. I love a few brands of energy bars but I also love making my own-it's easy to choose what ingredients go in them and you can make a bunch and freeze These particular bars are without sugar by default since I ran out of maple syrup. They are still so delish!

How to Make Fluffy Basmati Rice

I'm always and forever trying to make rice like they make at Indian or Persian restaurants. It's so delicious, fluffy and flavorful and I love the texture of basmati rice. So, I was talking to a friend who makes rice alot and he helped me with the recipe. The idea is to sautee the rice first and add ingredients that will give it flavor such as garlic, onion, spices etc. I serve the rice with beans or tofu, either sauteed or in a curry sauce. Rice is just so amazing, it's simple but nutritious and is a great alternative to bread or other grains.
