Blueberry Lemon Muffins
1/3 cup of vegan butter
1/2 cup of applesauce
3 tbsp of fresh lemon juice
1 cup of sugar (I used coconut)
1 pint of blueberries
1 1/2 cups of all purpose flour
1 tsp of baking powder
1/2 cup of non dairy milk
Combine all the ingredients and mix well. Fill cupcake cups and bake at 350 degrees for 20 minutes.
These are great for snack or for breakfast with butter. Substitute your favorite flour or make strawberry or raspberry muffins instead. The lemon went well with the blueberry. These are super summery and the whole family will love them!
