Fig and Apple Oats

My obsession with breakfast continues and so does my obsession with chocolate protein oats. I love adding protein powder to my oats just as they are done cooking. Not only does it add protein but also sweetness. Today I want to combine chocolate and peanut butter with my apple fig combination. I was going to make these separate recipes but I think combining them will be delicious. Run out and buy some cacao nibs! They are delish.

My previous apple fig chia seed pudding post is giving me inspiration for this recipe. For this recipe, I put an apple, a few figs and peanut butter in my food processor and processed on high, adding in the cinnamon.

4 dried figs
1 organic red apple, cut up
A few pinches of cinnamon
Filtered water to thin it out
1/2 cup of rolled oats
1 1/2 cups of filtered water
1 scoop of chocolate protein powder
2.5 oz of cacao nibs

Scoop the rolled oats into a small pan and turn the heat on low to medium. Add the 1 1/2 cups of water and cook on low, stirring the oatmeal often. When the oats have soaked up most of the water, remove the oats from the heat and add in the chocolate protein powder. Add in the apple fig peanut butter combo. Sprinkle on the cacao nibs last. If you need to add some non dairy milk to thin it out, do so.

What a breakfast of awesomeness. I know I always have oats or chia seed pudding for breakfast but I love it, it fills me for the rest of the day and it satisfies my sweet craving before the craving takes over my life!
I'm still eating as raw as possible too throughout the day. My favorite appetizer before dinner is a huge plate of strawberries, a sweet pepper and another fruit. Run out and get as much organic produce as you can!!

West Soy unsweetened plain soy milk is organic soybeans and water. Beautiful. If I don't buy milk, I make it myself, either almond or oat milk. Yesterday I bought oat milk and it is DELICIOUS!

How to Make Fluffy Basmati Rice

I'm always and forever trying to make rice like they make at Indian or Persian restaurants. It's so delicious, fluffy and flavorful and I love the texture of basmati rice. So, I was talking to a friend who makes rice alot and he helped me with the recipe. The idea is to sautee the rice first and add ingredients that will give it flavor such as garlic, onion, spices etc. I serve the rice with beans or tofu, either sauteed or in a curry sauce. Rice is just so amazing, it's simple but nutritious and is a great alternative to bread or other grains.
