Crust: 1 cup of oats, 8 soft, pitted Medjool dates and 2 tbsp of coconut oil in the food processor on high. Keep processing the mixture until it becomes sticky.
Filling: 3 ripe bananas, 10 tbsp of peanut butter, 4 tbsp of cacao powder in the blender. The mixture will be gooey.
Line a cupcake pan with wax paper and push a scoop of crust into the wax paper. Scoop the filling on top of the crust so that you're making mini pies. Use up all the filling and crust.
I took the pies out of the cupcake pan and put in airtight containers to store in the fridge.
I made 9 mini pies.
To cut down on fat and calories, delete the peanut butter. The dates and bananas give this dessert enough sweetness. Or cut down on the amount of peanut butter you use. You can also use one avocado in place of peanut butter or use another nut butter such as almond butter.
