Baked peach and cherry oats

I made this dessert completely from scratch and off the cuff, just took it out of my head and combined ingredients.  It isn't perfect but the second time around it got better after adding the peaches.  

I just had this for dessert with banana ice cream on top.  It's a great way to combine your favorite fruits with some natural sugar and whole grain oats.  Here is what I did:

Preheat your oven to 400 degrees.  Pit 2 cups of cherries and cup up 4 peaches.  Place the fruit in a pan on your stove and add 2 cups of either raw sugar or maple sugar to the pan; I used both because I didn't have enough maple sugar.  

Turn on the heat low until the sugar melts and stir.  Keep stirring every few minutes.  Spray a flat oven pan with oil.  Once the sugar is melted, take the pan off the stove and pour the fruit and sugar mixture into the flat oven pan.  Spread the fruit and sugar mixture around to cover the pan.  Cover the mixture with a handful of oats and cinnamon.  Put in the oven and bake until the oats brown a little bit and you can hear the fruit sizzling.  Remove and serve immediately with ice cream.  Or wait for it to cool a little then serve.  It tastes like an all natural cobbler.  Make sure you can have enough juice from the fruit and liquefied sugar before you bake. It's a delicious dessert!
