Zucchini bread!


My mom makes me zucchini bread all the time! My Grandmom also made it when I was little so they kind of shared the recipe. I was having this for dessert last night and she gave me the recipe. I made it vegan and used different ingredients. So thanks to my mom for this blog entry! You can eat this for breakfast or for dessert.


You can change the ingredients and make it your own like I did. I used half of the sugar because maple sugar is expensive. Here is my recipe:
3 cups of garbanzo bean flour
1/4 tsp of baking powder
1 tsp baking soda
1 tsp of cinnamon, ginger and cloves
1 cup of maple sugar
1 cup of coconut oil
3 ripe small bananas. Or cut a piece off of large bananas
1 whole large zucchini or 3 cups of zucchini processed in a food processor. Make sure it's pureed!
1 tsp of vanilla

Combine the dry ingredients and mix. Then add the wet ingredients and mix using a mixer. Beat until the batter is smooth. Spray two loaf pans with olive or coconut oil and pour the batter into the two pans. Bake at 325 degrees for 1 hour depending on your oven temperature. Don't bake longer than an hour and 15 minutes. This bread is so delicious! If you don't like bananas, use pureed silken tofu to replace the eggs. You can use applesauce to replace the oil but I love coconut oil so I used it. Enjoy!!
