The above picture is pasta with avocado pesto sauce. I had a pampered chef demo and we made this-it was sensational! You will need:
basil if you want it
3 pieces of garlic
2tbsp of olive oil
pasta of your choice (I use Trader Joe's brown rice penne pasta)
Peel the avocado and place in a food processor, add almost one whole lemon, add a few leaves of basil, the garlic and the olive oil and blend. If the mixture is too thick, add a little water. Pour on top of the pasta and mix. The avocado makes it thick but very rich and delicious. This is a good alternative to traditional pesto sauce. If you don't have basil, you can also use spinach.
