Non-dairy, egg free, super tasty potato salad

From now on, I'm going to call each dish exactly what it is...or better yet what it does NOT contain.  My mom gave me this recipe that is a mayo free, super spicy/tasty/you'll want to eat it everyday potato salad.  Garlic lovers, this one's for you!

About 4 small/medium red bliss potatos, put in water and boil until softened.
Use your food processor to make the topping.  Put the following in the processor:

1 cup of basil/chives
1 cup of mint leaves
1 tbsp of water
1 tbsp of olive oil
2 tbsp of pine nuts
2 cloves of garlic
4 tsp of lemon juice (or lime)
1/4 tsp of red pepper
1/2 tsp of sea salt
1/4 tsp of pepper

Combine everything in the food processor and process on high.  I did not have pine nuts, red pepper or mint leaves and it still turned out great.  You can process everything, taste it and then add more if need be.  Beware of the garlic, a little goes a very long way!  Enjoy :)
